Also called Inca Red, it was the choice of Inca soldiers, who believed the red color gave them strength during battle.

Once cooked, they puff up, forming small spheres similar in shape to couscous and take on a fluffy-yet-chewy texture.

Despite being considered a whole grain due to its nutritional profile, quinoa is technically categorized as a pseudocereal, as it doesn’t grow on grass, like wheat, oats, and barley 

Quinoa, is pronounced as ‘keen-wa’. With twice the protein content of rice or barley, quinoa is also a very good source of calcium, magnesium and manganese. Like buckwheat, quinoa has an excellent amino acid profile, as it contains all nine essential amino acids making it a complete-protein source. Quinoa is therefore an excellent choice for vegans who may struggle to get enough protein in their diets.

Quinoa is among the least allergenic of all the grains, making it a fantastic wheat-free choice.

Cooked red quinoa retains a bit crunchiness when cooked (unlike white quinoa that becomes mushier when cooked) and this texture makes it ideal for a cold quinoa salad  adn can be cooked in combination with white quinoa for even rice dishes like curd rice etc.
